Cheese: Avonlea Clothbound Cheddar

The Canadian Cheese Grand Prix, organized by the Dairy Farmers of Canada, is the most prestigious cheese competition in Canada. Held every two years, it showcases the outstanding quality, variety, taste and versatility of Canadian cheese made from 100% Canadian cows milk. In 2011 a total of 203 entries from across Canada.

This is Canada’s only clothbound cheddar from Cows Creamery, Prince Edward Island. It is aged just over a year, but the cloth allows the cheese to breathe and in that short time it develops a sharp and earthy flavour. The curd amazingly falls apart into firm globules at the slice of a knife. This cheese is powerful on the palate with a definitive pebble like crumble. The cloth bound rind may have a bit of natural mould which you should avoid. Stick to the perfectly crafted centre.

This stellar cheese was winner at The Canadian Cheese Grand Prix under the category “Aged Cheddar 1-3 Years.”
