Cheese: Le Bleu d’Elizabeth

The Canadian Cheese Grand Prix, organized by the Dairy Farmers of Canada, is the most prestigious cheese competition in Canada. Held every two years, it showcases the outstanding quality, variety, taste and versatility of Canadian cheese made from 100% Canadian cows milk. In 2011 a total of 203 entries from across Canada.

An organic, veined, semi-soft farmhouse cheese made with raw milk from Fromagerie du Presbytere in Quebec. With a natural crust dotted with ocre-coloured spots, this cheese contains beautiful bluish veins, sometimes with a slightly green tint due to the presence of Penicillum Roqueforti. Balanced salty taste with a hint of caramel sweetness on the tongue. When at room temperature this cheese spreads across a baguette slice with the giddy nonchalance of a firm and determined thumb.

This stellar cheese was winner at The Canadian Cheese Grand Prix under the category Blue Cheese.
