Chocolate Peanut Butter Pie


My favorite flavour combination! This pie is super easy to whip together and was featured at my Pie Party!

You will need:

1 1/2 cups chocolate oreo wafer crumbs

1/3 cup butter melted

1/2 cup whipping cream

80z cubed cream cheese

1 cup smooth peanut butter

1 Tb vanilla

1 cup icing sugar

6 oz semisweet chocolate

2 Tb candied peanuts

Directions:

Preheat oven to 350 F.

In a bowl, toss crumbs with butter. Pat into 9 inch pie plate. Bake in centre of oven untl firm, about 8 minutes. Let cool.

Filling: in a bowl, whip cream and set aside. In a large bowl, beat cream cheese until smooth; beat in peanut butter and vanilla. Beat in icing sugar until fluffy. Fold one-quarter of the whipped cream into the filling; fold in remaning cream. Spread over crust. Cover loosely and refrigerate until firm, about 2 hours.

Topping: Meanwhile, chop chocolate finely and place in heatproof bowl. In a small saucepan, warm cream over medium low heat until bubbles form around edge; pour over chocolate and stir until melted. Let cool. Drizzle over filling; sprinkle with nuts.

Serve pie cold from the fridge.
