Saint Paulin French Cheese

I saw this little cheese staring up at me at the grocery store recently and as soon as I saw it I had to buy it: simply loved the cutesy illustration on the box. Saint Paulin offers a buttery and nutty flavour. It literally melts in your mouth.

This cows milk, washed rind is smooth and leathery on the tongue. It ranges in colour from pale yellow to bright mandarin orange. It was the first French cheese produced from pasteurized milk and has remained so. St. Paulin (also known as Port Salut) is a mild and very pleasing dessert or table cheese, originally made by Trappist Monks. This fantastic fromage has an edible rind and is ripened in a round loaf with slightly protruding sides, and matures in about four weeks.
