Vache Maigre (skinny cow in French) is the cheese for you. It reminds me very much of Mimolette with a texture that is best enjoyed by nibbling with your front teeth like a rabbit. This particular cheese has a profound taste that should be eaten on its own at room temperature. Do not top with jelly’s or preserves, you’d be downplaying the cheese masters hard work!
